With a number of picky eaters, plus having to cook gluten free, we have been trying a number of new meal recipes lately hoping to find a few new favorites. With meat prices going up so much in recent years, we are trying to find recipes that use less expensive meat options or stretch the meat further by the addition of cheaper protien options (and are even trying some vegetarian options). In our search, I came across a recipe for Korean ground beef stir fry over here:
I made a few changes to the original recipe due to my picky eaters, and made it my own...and everyone here loved it! If you are looking to add something new to your menu, you should give it a try, it's simple and tasty!
Korean Ground Beef Stir Fry
Ingredients:
-1 pound ground beef
-4 cloves garlic, minced
-1 tablespoon olive oil
-1 red bell pepper, diced
-1 small zucchini, sliced
-1/2 cup carrots, shredded
-1/2 cup packed brown sugar
-1/2 cup gluten free soy sauce
-1 tablespoon sesame oil
-1/2 teaspoon ground ginger
-salt to taste (optional)
-sliced onions (for garnish)
-sesame seeds (for garnish)
Instructions:
1) Brown the ground beef in a skillet, adding the garlic towards the end. Remove from pan and set aside.
2) Drain the grease and add the olive oil to the pan. Add the vegetables and saute 2-3 minutes or until tender. Then add the ground beef back to the pan.
3) Whisk the brown sugar, soy sauce, sesame oil, ginger and salt (to taste) in a small bowl. Pour the mixture over the ingredients in the skillet and let simmer for a couple of minutes.
4) Serve over hot rice and add desired garnishes.
A simple meal ready in 20-30 minutes! Feel free to play around with it by adding your favorite vegetables (the original recipe called for 8 ounces of sliced mushrooms) or adding crushed red pepper flakes. Give it a whirl and let me know what variations are your favorite-or if you love it as is!
